My last meal in Vegas was a lunch I had not planned for, but turned out to be one of the most interesting and appetizing of the whole trip. I headed over to Rick Moonen’s RM SEAFOOD in the Mandalay Bay for a final lunch meeting. There on the menu was the item you see above: Rick’s new signature Moon ‘n Doggie. It’s a white shrimp hot dog topped with red cabbage slaw and crushed chipotle togarashi chips! And I did not expect to like it as much as I did! The dog had snap and a wonderful texture and flavor. The slaw and chips, in addition to the sauce, really added to the overall taste of each bite, not overpowering it in any way. Next time I am in Vegas, I’m stopping here first for more of these!!
